Kheer ( Payasam )

Ingredients :
Semiya - 1 cup
Sugar - 1 1/2 cup
Milk - 3 - 4 cups
Cardamom : 4 to 5
Cashew nuts - 10
Raisins - 5
Pistha - 10 ( rough chop )
Saffron - few flakes
Ghee - 2 tsp
Preparation:
1.

Potato Capsicum Fry

Ingrediants :
Potatoes - 2
Capsicum - 1
Onion - 1
Coriander Powder - 1 tsp
Turmeric - pinch
Salt - to taste
Red Chilli Powder - 1 tsp
Oil
Curry leaves - 5-6
Coriander Leaves
Preparation :
1. Chop Onion , and Capsicum into small squares.
2. Heat oil in a cooking pan , add the chopped onion and coriander until it starts turning a little brown.
3. Add chopped capsicum pieces, fry sprinkle some salt and turmeric powder.
4. Make sure that onion , capsicum dont turn watery.
5. Fry on high heat with enough oil. Sprikle some coriander powder.
6. After that add potato pieaces and continue to fry.
7. Add red chilli powder. If the potato looks cooked , turn of the stove.Please do not over cook.
8. Garnish with coriander leaves.
9. Serve with hot rice or roti.

Maida Bonda

Ingredients :
Maida ( All Purpose flour ) - 2 cups
Rice flour - 1/4 cup
Upma rava - 1/2 cup
Sour curd - 1 cup
Onions - 2 ( Finely Chopped )
Green Chillies - 5 - 6
Cumin seeds - 1 tsp
Curry leaves - 5 - 6
Coriander leaves - 1/2 cup
Oil for frying .
Preparation :
1. Maida , rice flour. upma rava , curd , salt, onions ( Finely Chopped ) Green chillies ,
Curry leaves , coriander leaves , Salt , soda and mix it well.
2. Take oil in a pan and heat.
3. Make round small balls with above mixture and fry in oil.
4. Serve with Ground Chutney.












Bangaladumpa vepudu


Ingredients :
Large Potatoes - 2
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
coriander powder - 1/2 tsp
Cumin powder - 1/2 tsp
Salt - 1 tsp
Oil - 1 tsp
Curry leaves - 5 to 6
Coriander Leaves.
Preparation :
1. Heat oil in a cooking pan , add the chopped potatoes. Saute on hight for 4-5 mts.
2. Reduce to medium flame and cook for 5-6 mts, reduce to flame to low , add salt to taste ,
place lid and cook till the potatoes turn soft.
3. Add the coriander powder, turmeric powder , chilli powder and jeera powder and mix it .
4. Still fry without lid on high flame for 4-5 mts and combine well till the potatoes turn a golden
brown.
5. Garnish with coriander leaves.
6. Serve with rice or roti.

Cauliflower Curry


Ingredients:

Cauliflower - 1 Small
Curry Powder - 1 tbsp
Red Chile Powder - 1/2 tsp
Salt - 1 tsp
Talimpu:
Urad Dal - 1/4 tsp
Cumin Seeds -1/4 tsp
Mustard Seeds - 1/4 tsp
Curry Leaves - 7 to 8
Oil 1 tsp

preparation :

1. Remove outer leaves, break cauliflower into small florets and thoroughly wash them.Heat oil in a pan, add all talimpu ingredients .
2 .When urad dal changes color, add cauliflower florets and salt. Cook covered on medium heat until cauliflower turns soft.
3. Sprinkle little water if required and stir occasionally.Uncover and fry the cauliflower till the edges start to turn brown.
4. Then add spicy curry powder and red chile powder. Sprinkle another tsp of water and stir fry for few seconds till cauliflower absorbs all the flavors.
5. Serve with rice or roti.

Chilli Panner


Ingredients :
Panner - 250 gms
Salt1 - 2 tbsp
Egg - 1
Corn Flour - 1/2
Ginger-Garlic Paste - 1 tbsp
Chopped Onions - 2 Cups
Green Chillies - 5 to 6
Soya Sauce - 1 tbsp
Vinegar - 1 tbsp
Ajinomoto - 1/4 tbsp
Oil - for frying
Little Water
Preaparation :
1. Cut the paneer into cubes. Mix together the paneer, 1 tsp salt, egg, corn flour, ginger garlic paste and water to just coat the paneer pieces with the mixture.
2. Heat oil in a pan and fry the paneer pieces coated with mixture till golden in color.
3. Heat 2 tbsp of the oil in a wok and stir fry the onions in it over high heat for half a minute.
4 . Add the green chillies, salt, soya sauce, vinegar, ajinomoto and the fried paneer cubes.
5. Garnish the chilli paneer with finely cut spring onions and coriander.

Happy Ugadi


Ugadi Subhakanshalu.

Ingrediants :

Jaggery
Small pieces of raw mango
Neem flowers (In U.S we don’t find neem flowers, so I made mine with out them)
Small pieces of banana
Little bit of red chillie powder
A pinch of salt

Preparation :

1. Soak tamarind in water for few minutes or microwave for 20 seconds.
2. Squeeze the pulp, the consistency should be little thick (if u feel it’s too thick, u can always add water).
3. Now add jaggery, mango, banana, neem flowers, red chillie powder and salt.
4. Offer to the god and then eat as prasadam.
