Happy Ugadi


Ugadi Subhakanshalu.

Ingrediants :

Jaggery
Small pieces of raw mango
Neem flowers (In U.S we don’t find neem flowers, so I made mine with out them)
Small pieces of banana
Little bit of red chillie powder
A pinch of salt

Preparation :

1. Soak tamarind in water for few minutes or microwave for 20 seconds.
2. Squeeze the pulp, the consistency should be little thick (if u feel it’s too thick, u can always add water).
3. Now add jaggery, mango, banana, neem flowers, red chillie powder and salt.
4. Offer to the god and then eat as prasadam.

Mango Rice


Ingredients:

Grated mango - 1 medium
Cooked rice - 2 cups rice
Turmaric -1/4 tsp
Salt - 1 tsp
For popu - oil 3 tbsp
Red chilli - 2 Green chillies
Ginger pcs - 1/2 tsp
Ground nut - 2 tbsp
Cashews - 1 tbsp
Bengal gram -1 tsp
Black gram - 1 tsp
Mustard seeds - 1/2 tsp
Inguva - a pinch
Curry leaves - 5 to 6

Preparation :
1. Heat oil in a pan add all popu ingredients and fry up to light brown. add grated mango, salt, turmaric and fry for 5 mts add cooked rice and mix well and remove from heat.
2. Garnish with coriander leaves.

Pachi Pulusu


Ingredients:

Onions - 2 (finely choped)
Tamarind - lemon size
Jaggery -3 tbsp
Red chillies - 4 (fried)
Salt - 1 tsp
Oil - 2 tsp
Mustard seeds - 1/4 tsp
Cumin seeds - 1/4 tsp
Curry leaves - 5 to 6
Garlic - 5 to 6

Preparation :

1. Soak tamarind and make 2 glasses of tamarind juice add jaggery, salt, hand crushed red chillies, finely choped onionsthalimpu.
2. Heat oil in a pan add mustard seeds, cumin seeds let them splutter add curry leaves add tamarind juice and mix well. no need to heat.

Mysore Bonda


Ingrediants:

Maida - 2cups
Curd ( sour) - 2cups
Rice Flour - 1/2 cups
Onions - 2 (pieces)
Green Chillies - 5 to 6
Soda - 1/4 tbl spoon
Salt - to taste
Corainder leaves - 5 or 6
Oil -

Method:
1 . Maida , Curd , Rice Flour ,Onion pieces , Green chillies , corainder leaves , Salt , Soda and mix it well.
2 . Take oil in pan and heat . Make round balls with above mixture and fry in oil .
3. Serve with Groundnut chutney.

Panner Pulav


Ingredients:
Cooked Basmati Rice -3 cups
Paneer Cubes -10
Bay leaves -2
Chopped Onions - 2
Turmeric Powder -1/2 tsp
Pepper Powder -1/2 tsp
Coriander powder -1/2 tsp
Mint Leaves - 5 to 6
Coriander - 1/2 bunch
Salt - to taste
Green Chillies - 5 to 6
Green peas -1/2 cup
Cut beans -1/2 cup
Chopped Carrot -to garnish
Cashews - 9 to 10
Oil - 4 tbsp
Preparation:

1. Cook beans and peas in microwave for 5 min. Heat oil in a pan and add bay leaves.
2. Add chopped onions,green chillies and fry till brown. Add cashews and paneer cubes and fry till brown.
3. Add beans and peas and stir fry. Add turmeric powder, salt,pepper, chopped mint leaves and fry.
4. Finally add cooked rice and mix well such that masala is well coated to rice.
5.Garnish with carrot and coriander and serve hot.

Palak Paneer


Ingredients:


Palak -1 bunch
Panir cubes -10
Oil - deep frying
Ghee -1 tbsp
Turmeric powder -1/2 tsp
Whole Milk:-1 cup
Cumin seeds:-1/2 tsp
Coriander powder:-1/2 tsp
Chilli powder:-1/2 tsp
Ginger - 1 tsp
Salt - as per taste

Preaparation:
1. Wash and chop spinach and cook without adding water untill tender.
Grind spinach to a fine paste.
2. Deep fry paneer and spread the paneer cubes on a tissue paper to remove excess oil.
Place the deep fried cubes in 1 cup of hot water to make them soft.
3. Leave in the water for about 5 minutes, then drain.
Heat 1 tbsp of the oil in a pan and add the black cumin seeds, coriander powder, chilli powder and ginger.
4. Stir fry and add the spinach paste and salt and stir for a minute or two, then add milk and simmer for 10 minutes.
5. Add cubes of panir and simmer for 10 minutes longer.
6. Garnish with coriander and serve hot with rice or chapatis.
